Tap<\/a> in Encinitas for a four-course, eight-beer pairing dinner.<\/p>\n<p>The menu:<\/p>\n<p><span style=\"text-decoration: underline;\">Beginning<br \/>\n<\/span>Confit of California rabbit, meyer lemon caviar, roasted parsnip puree, crispy guanciale wafer and rabbit reduction, paired with\u00a0Muscat d&#8217; Amour &amp; Recolte Sauvage:<\/p>\n<p><em>Muscat d&#8217;Amour &#8211;\u00a0<\/em>30% fermented White Muscat grapes from Bookcliff Winery aged in Chardonnay barrels.\u00a0Bottled January 2012 &#8211;\u00a010.78% ABV<\/p>\n<p><em>Recolte Sauvage &#8211;\u00a0<\/em>30% fermented Cabernet Sauvignon grapes from Bookcliff Winery aged in Cabernet Sauvignon barrels.\u00a0Bottled January 2012 &#8211;\u00a011.03% ABV<\/p>\n<p><span style=\"text-decoration: underline;\">Next<\/span><br \/>\nMesquite smoked &#8220;Mary&#8217;s&#8221; duck agnolotti, caramelized pluot BBQ, sweet honey cornbread dust and pickled romanesco, paired with\u00a0Depuceleuse &amp; Dihos Dactylion:<\/p>\n<p><em>Depuceleuse &#8211;\u00a0<\/em>100% <em>Brettanomyces<\/em>-fermented red ale aged with sour cherries in Zinfandel barrels.\u00a0Bottled March 2010 &#8211;\u00a010.08% ABV<\/p>\n<p><em>Dihos Dactylion &#8211;\u00a0<\/em>House <em>Brettanomyces<\/em> and house <em>pediococcus<\/em> strains fermented on a strong red sour ale aged for 18 months in fresh Plumpjack Cabernet Sauvignon Barrels.\u00a0Bottled February 2011 &#8211;\u00a010.74% ABV<\/p>\n<p><span style=\"text-decoration: underline;\">After That<\/span><br \/>\nWild Boar duo of crispy belly, pommes anna, guajillo chile ketchup;
