Executive Chef\u00a0Gunther Emathinger and R&amp;D Coordinator Corey Rapp created an amazing bread pudding with drunken raisins and caramel sauce recipe just for the December\/January &#8220;Plates &amp; Pints&#8221; column by Brandon Hernandez, but it&#8217;s just too good &#8212; trust me &#8212; to not post as the perfect Thanksgiving dessert idea. Pair with Karl Strauss <a href=\"http:\/\/www.karlstrauss.com\/PAGES\/Brews\/OurBeer\/TwoTortugas.html\" target=\"_blank\">Two Tortugas<\/a>.<\/p>\n<figure id=\"attachment_3260\" aria-describedby=\"caption-attachment-3260\" style=\"width: 300px\" class=\"wp-caption alignright\"><a href=\"https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2011\/11\/DSC_2235.jpg?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-3260\" title=\"DSC_2235\" src=\"https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2011\/11\/DSC_2235.jpg?resize=300%2C200&#038;ssl=1\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2011\/11\/DSC_2235.jpg?resize=300%2C200&amp;ssl=1 300w, https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2011\/11\/DSC_2235.jpg?resize=1024%2C682&amp;ssl=1 1024w, https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2011\/11\/DSC_2235.jpg?w=1800&amp;ssl=1 1800w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-3260\" class=\"wp-caption-text\">Bread Pudding with Drunken Raisins and Caramel Sauce<\/figcaption><\/figure>\n<p dir=\"ltr\"><strong>Bread Pudding with Drunken Raisins and Caramel Sauce<\/strong><br \/>\nYield: 6 servings<\/p>\n<p>6 extra large eggs<br \/>\n4 oz granulated sugar<br \/>\n1 Tbsp vanilla extract<br \/>\n\u00bd Tbsp ground cinnamon<br \/>\nzest of \u00bd a lemon<br \/>\n1 cup cream<br \/>\n1 quart whole milk<br \/>\n1 lb day-old brioche, cut into \u00bd-inch cubes<br \/>\n3 oz dried apricot, diced \u00bd-inch thick<br \/>\n3 ounces black mission figs, diced \u00bd-inch thick<br \/>\n3 Tbsp unsalted butter<br \/>\n\u00bd cup, plus 1 Tbsp Nutella<br \/>\n2\u00bd cups Caramel Sauce (recipe follows)<br \/>\nDrunken Raisins (recipe follows) to garnish<br \/>\nconfectioner\u2019s sugar<\/p>\n<p dir=\"ltr\">In a large bowl, whisk together the eggs, sugar, vanilla, cinnamon and lemon zest. In a large saucepan, bring the milk and cream to a slow boil. Slowly add the milk mixture, a ladleful at a time to the egg mixture, whisking constantly. Place the brioche and dried fruits in a separate large bowl and strain the egg mixture into it. Let stand for 15 minutes, being sure to push the bread into the mixture 3 to 4 times over that span so that the custard is completely soaked up by the bread.<\/p>\n<p dir=\"ltr\">Preheat oven to 350\u00ba F. Butter the sides and bottom of 6 ramekins. Spoon equal parts of the bread pudding mixture into the ramekins. Fill a shallow baking dish with about a half an inch of water. Place the ramekins in the dish and transfer to the oven. Bake for 45 minutes or until the bread pudding is set. Remove from the oven and let cool to room temperature.<\/p>\n<p dir=\"ltr\">Using a spoon, scoop a 1-inch deep and 1-inch wide hole out of the top center of the bread pudding. Fill the cavity with 1\u00bd tablespoons of Nutella. Unmold the bread pudding from the ramekin. Before serving, heat the bread pudding in a microwave for 30 to 35 seconds. Refrigerate for at least 4 hours. Remove from the refrigerator and drain, reserving the liquid. Serve.<\/p>\n<p dir=\"ltr\"><strong>Caramel Sauce<br \/>\n<\/strong>Yield: 2\u00bd cups<\/p>\n<p dir=\"ltr\">2\u00bd cups granulated sugar<br \/>\n\u00bd cup water<br \/>\n3\/4 cup cream<br \/>\nKarl Strauss Two Tortugas Belgian Quad (reserved from Drunken Raisins recipe above), plus enough to equal \u00bd cup<br \/>\n1 tsp vanilla extract<br \/>\n4 oz unsalted butter<\/p>\n<p dir=\"ltr\">Combine the sugar and water in a large heavy saucepan. Cook over medium heat, stirring often until the sugar dissolves. Bring to a gentle boil, stop stirring, and cook until the mixture turns a deep amber color. Gradually add the beer and cream (the sauce will bubble vigorously). Stir in the butter until it is completely incorporated. Remove from heat and stir in the vanilla.
