Late last year, Pryor and co-founder <strong>William DeWitt <\/strong>parted ways, leaving the latter to take overriding control.<\/p>\n\n\n\n<p>\u201cWe have been making big changes in the tasting room. Already this year we have added more barrels and are currently aging and fermenting ninety-three barrels, with plans to add an additional twelve in the upcoming months,\u201d says DeWitt. \u201cWe have also updated our tasting room, adding comfortable seating and new interior-design changes. A new mirror installation and couch grace the wall opposite the reclaimed wood wall, making our tasting room seem larger and brighter.\u201d<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"768\" src=\"https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2019\/04\/IMG_9248.jpg?resize=1024%2C768&#038;ssl=1\" alt=\"\" class=\"wp-image-22110\" srcset=\"https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2019\/04\/IMG_9248.jpg?w=1024&amp;ssl=1 1024w, https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2019\/04\/IMG_9248.jpg?resize=300%2C225&amp;ssl=1 300w, https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2019\/04\/IMG_9248.jpg?resize=768%2C576&amp;ssl=1 768w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/figure>\n\n\n\n<p>Barrel-aging and blending are now the task of DeWitt and co-founder <strong>Zack Brager<\/strong>. Production of wort is contracted out to North Park\u2019s <strong><a href=\"http:\/\/www.mikehessbrewing.com\">Mike Hess Brewing<\/a><\/strong>.<\/p>\n\n\n\n<p>\u201cAll of our beer is aged in oak for a minimum of nine to twelve months. We use French, American, and Hungarian oak, and a combination of barrels including red wine, white wine, whiskey, and bourbon,\u201d says DeWitt, who is also sourcing rum and tequila barrels. \u201cWe use fresh fruit on the majority of our beer and source locally whenever possible through backyard fruit-exchange groups. We recently sourced blood oranges, pink lemonade lemons, Persian limes, tangerines, and loquats through those networks.\u201d<\/p>\n\n\n\n<p>When\nCalifornia Wild Ales opened, it did so with a brewery-club model and no tasting\nroom. The business opened its tasting room to the public on a one-day-a-week\nbasis last April. It wasn\u2019t long before public hours expanded to six days per\nweek. The tasting room is now open daily. <\/p>\n\n\n\n<p>DeWitt and Brager keep ten sours on tap at all times in California Wild Ales\u2019 tasting room. Beers currently in the business\u2019 pipeline include Salted Starfruit, Triple Berry, Loquat, Berry Lemon, and Grilled Pineapple. All guests wearing a Star Wars-inspired costume will get a full pour for the price of a taster.<\/p>\n\n\n\n<p>\u201cWe\nare proud to be creating barrel-aged sours and wild ales in a city that is predominantly\noccupied by West Coast IPAs. We are happy to be able to provide something\ndifferent for those who are seeking out a new flavor,\u201d says DeWitt. \u201cWe make\nthis style of beer because we love it. We are thrilled when people who love sour,\nfunky ales find us. We are here for them.\u201d <\/p>\n\n\n\n<p>California\nWild Ales is located at <strong>4202 Sorrento\nValley Boulevard, Suite L\/M<\/strong>.
