{"id":21158,"date":"2018-09-25T12:19:45","date_gmt":"2018-09-25T19:19:45","guid":{"rendered":"https:\/\/archives.csusm.edu\/westcoastersd\/?p=21158"},"modified":"2018-09-25T13:29:19","modified_gmt":"2018-09-25T20:29:19","slug":"ucsd-extensions-craft-brewing-industry-overview","status":"publish","type":"post","link":"https:\/\/archives.csusm.edu\/westcoastersd\/2018\/09\/25\/ucsd-extensions-craft-brewing-industry-overview\/","title":{"rendered":"UCSD Extension&#8217;s Craft Brewing Industry Overview"},"content":{"rendered":"<p>Now in its fifth year, the UC San Diego Extension Brewing Certificate program has made its <a href=\"https:\/\/extension.ucsd.edu\/courses-and-programs\/brewing\">elective courses<\/a> &#8212; with the exception of the Brewing Internship &#8212; available to the public.<\/p>\n<p>The headliner is the <a href=\"https:\/\/extension.ucsd.edu\/courses-and-programs\/craft-brewing-industry-overview\">Craft Brewing Industry Overview<\/a>, held over the course of six Wednesday evenings starting on October 3.<\/p>\n<p>&#8220;These courses are great opportunities for people who are new hires at a brewery, or even for members of the public who are curious about the industry,&#8221; said Teresa Grosch, a program manager at UCSD Extension and facilitator of the brewing certificate program.<\/p>\n<p>Instructors of the Craft Brewing Industry Overview include industry lawyer Candace Moon, Culver Beer co-founder and UCSD extension grad Mike Stevenson, local brewing veteran Tom Nickel, and relative newcomer (and recent Great American Beer Festival <a href=\"https:\/\/archives.csusm.edu\/westcoastersd\/2018\/09\/22\/ocean-beach-brewery-named-best-small-brewpub-at-gabf\/\">medal winner<\/a>) Nathan Stephens of Eppig Brewing.<\/p>\n<p>Also teaching is Sheldon Kaplan, a frequent editorial contributor to <em>West Coaster<\/em> and\u00a0director and producer of the San Diego craft beer-focused documentary <a href=\"http:\/\/www.sudscounty.com\/index.htm\"><em>Suds County USA<\/em><\/a>.<\/p>\n<p>&#8220;My personal mission statement, as it relates to the philosophy of these talks, is divining the near future of craft beer as best we can,&#8221; Kaplan stated. &#8220;We&#8217;ll be trying to understand both craft beer&#8217;s present and past, looking at this primarily from a San Diego perspective, and seeing if we can agree on any applicable patterns that have emerged and\/or are emerging that may or may not inform the future.&#8221;<\/p>\n<p>More specifically, Kaplan plans to discuss the shifting nature of craft beer (tastes\/laws\/actions by macro brewers\/actions by other sections of the alcohol and overall beverage industries), capital (how to get it\/determining what you&#8217;re willing to give up for it), what keeps brewers up at night, why San Diego has become such a capital of craft, contract\/tenant brewing, labor costs, hops and hop contracts, the export markets, San Diego&#8217;s influence around the world, the growth of Baja breweries, gluten-free issues, and much more.<\/p>\n<p>Kaplan interviewed a number of San Diego brewers, as well as some ex-SD brewers now working elsewhere, specifically for these lectures.<\/p>\n<p>&#8220;I wanted to attempt to determine what is currently working for them (and what&#8217;s not), the current challenges that they face, both with production, distribution, and in raising financing, and their plans for the future and how best to get there,&#8221; he said. &#8220;This information was given on the condition that it would only be shared in these specific classes, and will not be published in any other format.&#8221;<\/p>\n<p>Kaplan also plans to make himself available to students after the course has concluded.<\/p>\n<p>&#8220;Craft brewing is like life: shit most likely will happen that you haven&#8217;t planned for,&#8221; said Kaplan, whose name was thrown in the hat to help with this course by Yuseff Cherney, of Ballast Point fame, who&#8217;s been lead instructor of the brewing extension program since 2013.<\/p>\n<p>Craft Brewing Industry Overview will also be available in the spring.<\/p>\n<p><a href=\"https:\/\/extension.ucsd.edu\/courses-and-programs\/brewing\">Elective courses<\/a> open for public enrollment:<\/p>\n<ul>\n<li>Craft Brewing Industry Overview<\/li>\n<li>Marketing and Distribution for Breweries<\/li>\n<li>Brewery Operations and Financial Management<\/li>\n<li>Draught Beer Systems Operation and Maintenance<\/li>\n<li>The Origins and History of Beer<\/li>\n<li>Brewery Safety<\/li>\n<li>Brewing Recipe Formulation<\/li>\n<li>Flavor Attributes of Beer and Food<\/li>\n<li>Food Pairings and Beer Dinners<\/li>\n<li>Barrel Aging<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Now in its fifth year, the UC San Diego Extension Brewing Certificate program has made its elective courses &#8212; with the exception of the Brewing Internship &#8212; available to the public.
