It\u2019s sure to be a sold-out affair behind a clientele both sizable and loyal. Amidst that revelry, which will take place in the parking lot behind \u201cThe Beard\u2019s\u201d facility, fans will be able to spy a piece of the company\u2019s future\u2014a 1,300-square-foot warehouse space that is being converted to house Burning Beard\u2019s wild-ale program.<\/p>\n<p>\u201cThe new space will be dedicated solely to the production of wild, Brett(anomyces), and mixed-culture beers,&#8221; says co-founder <strong>Mike Maass<\/strong>. \u201cThe space will feature a copper-lined <em>koelschip<\/em> for spontaneous fermentation, along with a variety of oak fermentation vessels in various shapes and sizes\u2014red and white wine barrels, foeders and other such cooperage.\u201d<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2018\/03\/IMG_8167-e1521475021909.jpg?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-19936\" src=\"https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2018\/03\/IMG_8167.jpg?resize=225%2C300&#038;ssl=1\" alt=\"\" width=\"225\" height=\"300\" \/><\/a>Located directly east of Burning Beard\u2019s brewery, it is completely isolated from that production space to prevent cross-contamination from wild yeast and microorganisms. Build-out is complete for the most part, with electrical, lighting, plumbing, drains and walls taken care of. The company is currently awaiting approval from the California Department of Alcoholic Beverage Control (ABC) to begin producing wild ales.<\/p>\n<p>\u201cWe\u2019ll be using the <em>koelschip<\/em> to produce a Lambic base that we\u2019ll age for a year to blend with the Lambic barrels we\u2019ve had aging for two years now,\u201d says Maass, explaining the longtime Belgian brewing technique of blending three consecutive years\u2019 vintages of Lambic to produce what is called a Gueuze. \u201cWe\u2019ll also do a Flanders (-style red ale) base that we\u2019ll age for a year and blend with the Flanders barrels we\u2019ve had going for a year. Additionally, we\u2019ll use the space to experiment with our proprietary in-house yeast strain, <em>Brulanta Metio<\/em>.\u201d<\/p>\n<p>That yeast\u00a0strain was propagated over a three-year span by Burning Beard director of brewery operations and head brewer\u00a0<strong>Jeff Wiederkehr<\/strong>\u00a0in his back yard. &#8220;I coolshipped it with a small chunk of wood I found in Belgium, harvested the yeast, coolshipped again&#8230;rinse, repeat,&#8221; says Wiederkehr. &#8220;We tried it, liked it and currently have it in the bank at (local yeast-production company)\u00a0<a href=\"http:\/\/www.whitelabs.com\"><strong>White Labs<\/strong><\/a>.&#8221;<\/p>\n<p>Barring any hiccups, Burning Beard is on-track to begin utilizing its new space before summer.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>El Cajon\u2019s lone brewery is plenty capable of filling that municipality&#8217;s role as lone beer innovator.
