That individual is <a href=\"https:\/\/archives.csusm.edu\/westcoastersd\/2015\/05\/26\/qa-with-beau-schmitt\/\" target=\"_blank\"><strong>Beau Schmitt<\/strong><\/a>, best known as the founder of <strong>SD Brew Project<\/strong>\u2014a 31-tap Mission Hills bar exclusively serving San Diego beers from almost every one of the region\u2019s breweries\u2014and the consultant responsible for the beer selection at downtown\u2019s recently unveiled <a href=\"http:\/\/quadalehouse.com\/\" target=\"_blank\"><strong>Quad Alehouse<\/strong><\/a>. The former business has been closed for months, but it will be reborn, new and improved, tomorrow with the opening of <a href=\"http:\/\/www.thebrewproject.com\" target=\"_blank\"><strong>The Brew Project<\/strong><\/a>.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2015\/10\/brewproject_02.jpg?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-12103\" src=\"https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2015\/10\/brewproject_02.jpg?resize=300%2C254&#038;ssl=1\" alt=\"brewproject_02\" width=\"300\" height=\"254\" srcset=\"https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2015\/10\/brewproject_02.jpg?resize=300%2C254&amp;ssl=1 300w, https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2015\/10\/brewproject_02.jpg?resize=900%2C761&amp;ssl=1 900w, https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2015\/10\/brewproject_02.jpg?w=1000&amp;ssl=1 1000w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>Installed in the abode-like, indoor-outdoor Hillcrest restaurant space that formerly housed R Gang Eatery, The Brew Project is a full-service restaurant and bar that, like its predecessor, aims to shine a glaring spotlight on San Diego beer. Schmitt describes it as \u201ca San Diego brewery tour under one roof,\u201d courtesy of a 30-tap, glycol-chilled, cold-blocked draft system. And it won\u2019t simply be a trip to the popular breweries in town. Schmitt is one of the few beer buyers who gives just about any brewery a shot, culling every business\u2019 portfolio for the best they have to offer in an effort to provide each operation a chance to convey what they\u2019re all about.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2015\/10\/brewproject_04.jpg?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-12105\" src=\"https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2015\/10\/brewproject_04.jpg?resize=300%2C193&#038;ssl=1\" alt=\"brewproject_04\" width=\"300\" height=\"193\" srcset=\"https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2015\/10\/brewproject_04.jpg?resize=300%2C193&amp;ssl=1 300w, https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2015\/10\/brewproject_04.jpg?resize=900%2C580&amp;ssl=1 900w, https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2015\/10\/brewproject_04.jpg?w=1000&amp;ssl=1 1000w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>In addition to beer, six taps will dispense red, white, rose and sparkling wines plus guava mango kombucha and Caribbean coffee served on nitro. (Two of the remaining two-dozen beer taps are also of the nitrogen variety.) Local distilleries such as <a href=\"http:\/\/www.ballastpoint.com\" target=\"_blank\"><strong>Ballast Point Brewing and Spirits<\/strong><\/a>, <a href=\"http:\/\/www.killdevilspiritco.com\" target=\"_blank\"><strong>Kill Devil Spirit Co.<\/strong><\/a>, <a href=\"http:\/\/www.malahatspirits.com\" target=\"_blank\"><strong>Malahat Spirits<\/strong><\/a>, <a href=\"http:\/\/www.oldharbordistilling.com\" target=\"_blank\"><strong>Old Harbor Distilling<\/strong><\/a> and more will also be highlighted via a craft cocktail program. And a sense of locality will be presented in a menu that will appeal to San Diegans thanks to breakfast burritos, tortas, entr\u00e9e salads and a variety of gluten-free options, all of which can be enjoyed inside or on an extensive, two-level patio that, like the restaurant&#8217;s interior, features a TV-viewing option courtesy of a 70-inch, corner-mounted flat-screen.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2015\/10\/brewproject_05.jpg?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-12106\" src=\"https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2015\/10\/brewproject_05.jpg?resize=300%2C273&#038;ssl=1\" alt=\"brewproject_05\" width=\"300\" height=\"273\" srcset=\"https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2015\/10\/brewproject_05.jpg?resize=300%2C273&amp;ssl=1 300w, https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2015\/10\/brewproject_05.jpg?resize=900%2C820&amp;ssl=1 900w, https:\/\/i0.wp.com\/archives.csusm.edu\/westcoastersd\/wp-content\/uploads\/2015\/10\/brewproject_05.jpg?w=1000&amp;ssl=1 1000w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>But there&#8217;s more to the representation of local beer than what&#8217;s in the glass. Growlers have been fashioned into decorations, mosaiced brewery stickers serve as a wallpaper of sorts in the bar area, and servers&#8217; attire consists of their choice of local brewery t-shirt (except when the NFL is on, at which point they can choose to don powder-blue burial shrouds instead&#8230;damn, that was an awful exhibition against the Raiders earlier today). Additionally, a bottle shop has been installed so customers can take rare and everyday beer home in bottles.<\/p>\n<p>The Brew Project will be open daily, from <strong>11 a.m to midnight, Monday through Thursday<\/strong>, and <strong>9 a.m. to 2 a.m., Friday through Sunday<\/strong>. Three specialty brews Schmitt plans to offer for the opening day crowd include <a href=\"http:\/\/www.coronadobrewing.com\" target=\"_blank\"><strong>Coronado Brewing Company<\/strong><\/a>\u2019s new Stingray Imperial India Pale Ale, a specialty version of <a href=\"http:\/\/www.secondchancebeer.com\" target=\"_blank\"><strong>Second Chance Beer Co.<\/strong><\/a>\u2019s Tabula Rasa porter brewed with cocoa nibs and coconut, and <a href=\"http:\/\/www.chuckalek.com\" target=\"_blank\"><strong>ChuckAlek Independent Brewers<\/strong><\/a>\u2019 sour blonde ale made with watermelon.
