Any given weekend, one can happen upon a packed house at Santee’s Pacific Islander Beer Co. The five-year-old, culturally-themed brewery has its share of lively regulars who enjoy the Hawaiian thematic and tiki-adorned front patio. Food trucks currently provide customers food to soak up PIB beers, but ownership plans to take care of that in-house in the near future, having set aside 330 square feet of its facility for installation of a kitchen.
“We are looking for a food tenant that would be responsible for the kitchen buildout and half the rent per month,” says co-owner and head brewer Will Fox. “They would keep all the sales from the food side. We feel like we can make our place a destination people will want to spend time at while substantially increasing beer sales.”
While the financial terms are set, Fox and his colleagues are rather flexible. They say the square footage allotted for the project can be adjusted if necessary. Fox would prefer for a high-quality pizza vendor to take the space, but also sees great potential for barbecue.
