After successful beer brunches with heavy hitters like AleSmith, Alpine, and the Trappist breweries, Toronado North Park is again closing to the public Sunday morning for a five-course event with Sierra Nevada.
Brewery ambassador Steve Grossman is a tentative attendee, and the brunch will begin at 10:30 a.m. with BRUX Domesticated Wild Ale, the collaboration with Russian River.
Chef Nate Soroko then kicks off his courses with oyster “ceviche” in cucumber/chili/lime juice and a BRUX sorbert shooter with hop-salted rim, paired with Sierra Nevada Kellerweis.
Second course: Hamachi tartare/Nicoise with fava bean spread, white corn, heirloom tomatoes and confit of purple potato, paired with Sierra Nevada Pale Ale (draft).
Third course: Spiced lamb belly in a yogurt brine served on a bed of faro with a poached quail egg, paired with Bigfoot Barleywine on draft and barrel-aged from the bottle.
Fourth course: Coconut-seared duck with a beet puree, pea shoots and heirloom tomato, paired with Ovila Quad with plums.
Fifth course: Lemon curd and black pepper sugar “ears”, paired with Torpedo Extra IPA from the beer engine.
